Introduction
I call it my Spur o' the Moment Turkey Meatloaf because I had a bunch of stuff lying around and I wanted to make something... and this was the result. Ingredients

2 lbs. of ground turkey
1/2 medium sized onion, chopped
3 cloves of garlic, chopped or pressed
1/2 cup of Bell Pepper (any color) chopped
2 large eggs
1 tbsp parsley
1 tbsp basil
1/2 cup of store-bought marinara sauce
Directions
Preheat your oven for 350 degrees. How long your oven takes to heat up will determine when you actually want to start this...
1. Lightly beat the eggs in a small dish.
2. In a large bowl, combine turkey, onions, bell pepper, garlic, and eggs. Have fun with it and get MESSY. I find using my hands is the best and easiest way to do it. Make sure to was up thoroughly after though!
3. Spray a 5"x9" loaf pan and squeeze all that mixture in there.
4. Bake pan in (350 degree) oven for 45 minutes - checking periodically to (quickly) drain any excess liquid that may occur during cooking.
5. Once done, remove pan and place 1/2 cup of marinara sauce on top of loaf. Return to (350 degree) oven for another 15 - 20 minutes.
6. Once out of oven allow to rest for minimum of 5 minutes. Cut lengthwise down the middle and then once about every inch crosswise for 16 perfectly portioned pieces of meatloaf!
7. Enjoy! I sure did...
