Number of Servings: 8

Ingredients

    1.5 lbs lean beef cut into 1inch chunks
    1 can chopped tomatoes
    1 cup frozen corn
    1 cup frozen lima beans
    4 med potatoes, diced
    2 cups baby carrots, cut in half
    1 med onion, chopped
    1 can veg broth( water or beef is fine)
    2 tbls flour
    1 tsp olive oil
    1 tsp garlic powder
    salt & pepper to taste

Directions

Coat meat with flour & brown in olive oil. Meanwhile, place all ingredients in crockpot and stir. Spoon meat on top. Set crockpot to med and cook for 7-8 hours. Makes approx 8 2-cup servings.
