Ingredients

    1/2 onion, chopped fine
    1 28-ounce can chopped tomatoes with juice
    1 1 1/4-ounce package taco mix
    8 ounces very lean ground round, crumbled
    3 cups cooked ziti or penne pasta (about 6 ounces dried)
    1 cup nonfat cottage cheese
    1/2 cup nonfat shredded cheddar cheese

Directions

Heat over to 425 degrees.

Spray a 7" X 11" baking dish with cooking spray. In a medium bowl or food processor, blend onion, tomatoes, and taco mix.

Spread 1 cup of the tomato sauce on the bottom of the baking dish. Add the cooked pasta. Dot with the ricotta and then spread cheese with a knife.

Stir the ground beef pieces into the remaining tomato sauce and spoon over the cottage cheese. Sprinkle with the shredded cheese. Bake 25 - 30 minutes. Serve immediately.
