Ingredients

1 1/2 tbsp sugar-free cranberry sauce
3 tbsp non-fat (preferably organic) prebiotic yogurt (I use Liberte brand)
1 tsp lemon juice
1/2 tbsp yellow mustard
1/4 tsp garlic powder
salt and pepper to taste
250g raw beets, coarsely grated
1 tbsp minced shallot
80g raw cauliflower, minced
4 cups baby spinach, washed and dried
Directions
In a mixing bowl, combine cranberry sauce, yogurt, lemon juice, mustard and seasonings.
Add grated beets, shallot and cauliflower, tossing well to coat. Let sit 8-10 hours in fridge to marinate (up to 24 hours).
Divide spinach between two serving dishes, top with equal amounts of beet mixture. Serve immediately.
