Ingredients

Cabbage - 1/2 medium head
Ground beef - extra lean - 1 pound
Stewed tomatoes - 2 cans (4 cups)
V 8 Juice - 2 cups
Uncooked Mixed Rice: wild rice, brown long grain, brown medium grain, (or white rice) - 1 cup
Onion - 1 cup chopped
Garlic - 3 cloves minced
Salt - 3 tsp
Pepper - 1 tsp
Directions
1. Slice 1/2 head of cabbage into thin slices and place in the bottom of a casserole dish. Reserve two slices for top.
2. Mix ground beef, salt, pepper, minced garlic, chopped onion, and rice together.
3. Drop ground beef mixture by teaspoons over top of cabbage.
4. Scatter remaining cabbage over mixture.
5. Pour stewed tomatoes over top of mixture.
6. Pour in V8 juice.
Bake uncovered in 300 degree oven for 2-3 hours or until cabbage is tender.
Makes approximately 10 1-cup servings.
