Introduction

For this recipe I just put stuff together that I already had in my kitchen. Easy, cheesy and good on a cold night.

You can substitute chicken for the ground beef and use lower sodium seasonings for a more health-conscious meal.

Ingredients

    1 lb lean ground beef
    1/2 cup crushed tortilla chips
    1 packet taco seasoning
    1 can Rotel tomatoes & diced chilies
    1/2 lb Velveeta
    1 cup white rice
    1 can sliced black olives

Directions

Diced Velveeta in microwave bowl. Add Rotel. Heat until cheese is melted and smooth.

Meanwhile, cook rice according to package directions. Brown ground beef until done and drain. Add taco seasoning to ground beef. Stir until well blended. Mix half of rotel/cheese mixture in with the rice.

Spray casserole dish (9x13) with non-stick spray. Layer tortilla chips, the rice mixture, then the ground beef. Drizzle remaining rotel/cheese over the top and sprinkle with black olives. Bake at 350 degrees for 15 minutes or until cheese is bubbly.
