Introduction

Ingredients

    2 large eggs
    2 tbs banana or pineapple (I used pineapple), or sweet potato or carrot or butternut squash puree, or canned pumpkin
    1/4 tsp. cinnamon
    4 sliced whole wheat bread (I used Pepperidge Farm Light 7 Grain bread (just 45 calories per slice)
    Non stick cooking spray
    2 tsp. trans-fat-free margarine spread (Land O Lakes)
    4 tbs. Flax Seed (FiProFlax)
    Add syrup (use lite for lower calories, but not included in recipe!)

Directions

1. In a shallow bowl, whisk eggs, puree, and cinnamon. Add the bread, turning them to soak for 30 seconds.

2. Heat skillet with nonstick cooking spray over med. high heat. when hot, add margarine. when margarine sizzles, add the bread slices, and sprinkle with 1 tbs flax per slice. cook until golden brown on outside (2-3 min). Serve with warm syrup and fruit.
