Ingredients

    1 c. uncooked quinoa
    2 green bell peppers
    1 medium size yellow onion
    2 stalk celery
    2 cans petite diced tomatoes
    1 can black beans, drained
    1 can chili beans, undrained
    2 Tbsp. chili powder (or to your liking)
    1 Tbsp. cumin powder (or to your liking)
    1 tsp. salt
    1 tsp. black pepper

Directions

Follow the cooking instructions on the package for the quinoa. Meanwhile, dice your veggies and saute' them in a big chili pot until they are tender. Add your spices, tomatoes, beans, and cooked quinoa and let simmer for about 10 mins so the flavors will meld together. Enjoy!

    Very Good
    I made this for the first time tonight. A couple of additions that I made were using Rotel diced tomatoes with jalapeno peppers and I added 2 diced raw jalapeno peppers, seeded & deveined. The final result is very good. The servings are quite large, given it makes 6 servings. - 4/5/14

    Sounds like a twist on traditional uses for Quinoa. I will definitely keep it in mind, the next time I make vegan chili. - 2/13/09
