This is a very hearty and tasty stew for a cool autumn night. It's so simple to make, too. Just put the first 4 ingredients in the cooker before work. Ingredients

    1 lb beef round steak, cut into bite-sized cubes
    2/3 cup apricot nectar
    1 cup medium thick and chunky salsa
    1 tsp pumpkin pie spice
    1/2 cup chopped dried apricots
    1/2 cup sliced green onion
    2 Tbs water
    1 Tbs flour
    4 Tbs cilantro


Directions

1. Place the meat, salsa, pumpkin pie spice, and salsa in the slowcooker and cook on LOW for 8 to 10 hours.
2. Turn the slowcooker to HIGH. Add apricots and green onions. Cover and cook for 10 minutes.
3. Stir water and flour together until smooth. Add to stew and stir well to combine. Cover and cook for 15 minutes or until thickened.
4. Serve over rice and garnish with cilantro.
