Ingredients

2 1/2 lb sirloin tip roast- cut in small pieces
1 1/2 cup diced onion
1 cup diced celery
1 6oz can tomato paste
1 28 oz can diced tomatoes w/ basil, garlic & oregano
1 28 oz can tomato sauce
1 14 oz can tomatoes w/green chilis
1cup finely chopped green pepper
3 Tbs chili powder
2 tsp cumin
1 Tbs splenda or sugar
2 cans pinto beans (rinsed)
Directions
Spray large frying pan with cooking spray. Add beef, bell pepper, onions and celery. Cook until onions and celery are translucent and pepper is soft. Meanwhile, combine remaining ingredients in large pot. Drain fat off meat mixture and add to pot. Mix well. Bring to a slight boil, turn down heat to simmer, cook for about an hour and a half.
Note: The spenda ( or sugar) will remove the acid taste from the canned tomatoes.
Makes 12-1 1/2 cup servings.
