Ingredients

    1 lb. salmon - skinned
    3 cups raw spinach - coarsely chopped
    3 scallions - minced
    1 tablespoon grated fresh ginger
    1/4 teaspoon salt
    1/4 teaspoon pepper
    1 large egg white
    1 tablespoon soy sauce
    2 tablespoons pickled ginger - optional
    PAM spray

Directions

Cut the salmon into 1/4-inch pieces, then stir together with the spinach, scallions, ginger, salt, and pepper in a large bowl until well combined.

In a separate bowl, beat together the egg white and soy sauce and stir into the salmon mixture.

Form the mixture into 4 patties 1/2 inch thick.

Heat a 12-inch nonstick skillet over medium heat until hot and spray w/PAM.

Cook patties, turning once (gently), until golden brown and cooked through, about 7 minutes total.

Serve each burger topped with optional pickled ginger.

    I have made this twice and loved it both times. I use half a box of frozen spinach and about 1/4 cup of bread crumbs. I also make 5 patties. I don't really like salmon and this recipe makes it taste great. - 4/16/09
