Introduction
Still sinfully good comfort food! Still sinfully good comfort food!Number of Servings: 6
Ingredients
-
1 pound spaghetti
1 onion, diced
4 egg yolks
1 teaspoon black pepper
1 teaspoon salt
3 teaspoons fat free half and half, optional
4 slices reduced fat bacon
Directions
Boil the spaghetti in water until it is al dente. Time this so it will finish at the same time that the bacon and onion are done. It is important that the pasta is hot.
While the spaghetti is cooking, fry up the bacon until crispy. Remove the bacon with a slotted spoon, crumble in a small bowl and save. Add the onion to the bacon grease and saute until transluscent. Add the onion to the crumbled bacon.
Beat the egg yolks. Add the black pepper and salt to the beaten yolks. Set aside. Add the half and half to this mixture, if desired, for a creamier dish.
Put the drained spaghetti in a large bowl and pour the onions and bacon on top. Add the egg mixture to the pasta and mix well. The heat of the spaghetti will cook the egg and make the dish creamy. Serve immediately.
