Introduction

Number of Servings: 20

Ingredients

    Eggplant, potato and zucchini - chop in 1/2 inch cubes.
    Ground meat (can use lamb) - Season the meat with cayene pepper to taste and roll into 1" meat balls.
    Green beans (can use frozen)
    One can of black olives with juice
    1 medium onion chopped
    One large can tomato sauce

Directions

Mix the cubed vegetables, green beans, black olives, onions and meat balls in a 6 quart crock pot. Mix red pepper with tomato sauce, to taste, and the juice from the olives. Pour over the mixture. Drizzle the top with olive oil. Cook in the crock pot for eight hours, until tender. Serve in whole wheat pita. You can top with yogurt. Makes 20 1 cup servings.
