This soup has a Thai peanut base with American veggies. Very tasty. This soup has a Thai peanut base with American veggies. Very tasty.
Number of Servings: 6


    1 1/2 cup chopped Broccoli
    1 1/2 cup chopped Cauliflower
    1 cup chopped Onions
    1 T grated Ginger
    3 cloves minced or crushed garlic
    1/4 tsp Cayenne pepper
    1/2 tsp Salt
    1/2 tsp Pepper
    2 T Olive Oil
    1 1/2 cup Vegetable Stock
    1 1/2 cup Water
    1 28-oz can diced Tomatoes
    6 T crunchy or smooth peanut butter


Saute onions in oil until soft. Add broccoli, cauliflower, ginger, garlic, salt and peppers and continue sauteing until veggies are just tender. Add stock and water, tomatoes, and peanut butter. Reduce heat and simmer for 20 minutes.
