Ingredients

    4 perch (or other white fish) fillets
    lemon juice
    olive oil
    sea salt
    fresh black pepper
    For the Salsa:
    250 g. olives, drained
    1 can of peeled tomatoes, drained
    1 chili pepper, coarsely chopped
    3 cloves garlic, coarsely chopped
    3 sprigs fresh oregano
    fresh basil leaves
    lemon juice
    olive oil
    sea salt
    fresh black pepper

Directions

Place your fish in a baking dish, sprinkle with salt and pepper, squirt the juice of 1 lemon on them and drizzle with 1 tablespoon of olive oil. Broil them in the oven at 200°C for 20 -25 min. In the meantime, start making the salsa. Place all the ingredients in a food processor and mix until the olives and tomatoes are coarsely chopped and well-combined with the garlic and chili pepper. Taste and adjust seasoning accordingly. once your fish is done, put the filets on individual plates and top with salsa. Makes 4 servings of 1 filet each!
