Ingredients

    Low-Carb Pot Roast Soup

    1 package lean beef round chunks
    1 tbsp extra virgin olive oil
    1 can pinto beans
    1 cup fresh baby carrots
    1/3 cup fine chopped, fresh green onions
    2 cups water
    2 beef bouillon cubes
    Mediterranean Oregano to taste (about 1 Tbsp)
    Coarse ground black pepper to taste (about 1 Tbsp)

Directions

In a slow cooker, place all ingredients except bouillon cubes. Stir well. Turn slow cooker on high. Wait 30 minutes, add cubes. Stir again. After three hours, turn slow cooker down to low. Cook an additional six hours.
