Introduction

This is a five-star-rated pumpkin loaf recipe that I modified to be only "half a cheat" by cutting the fat and sugar in half and using half whole wheat flour. It is still very sweet; the sugar could be reduced even more. My family cannot tell that this is a healthier version of the recipe. Makes 2 large loafs. Ingredients

    1 (15 ounce) can pumpkin puree
    4 eggs
    1/2 cup canola oil
    1/2 cup unsweetened apple sauce
    2/3 cup water
    1.5 cups white sugar
    1.5 cups Splenda
    1 1/2 cups all-purpose flour
    2 cups whole wheat flour
    2 teaspoons baking soda
    1 1/2 teaspoons salt
    1 teaspoon ground cinnamon
    1 teaspoon ground nutmeg
    1/2 teaspoon ground cloves
    1/2 teaspoon ground ginger
    1/2 cups chopped walnuts

Directions

Preheat oven to 350 degrees F (175 degrees C).

Grease and flour 2 loaf pans.

In a large bowl, mix together pumpkin puree, eggs, oil, apple sauce, water , Splenda and sugar until well blended.

In a separate bowl, whisk together the flours, baking soda, salt, cinnamon, nutmeg, cloves and ginger.

Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans. Top with chopped walnuts.

Bake for about 65 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean.
