Introduction

THIS IS A QUICK HEALTHY MEAL. I USE LEFT OVER ROAST BEEF OR PRE PACKAGED COOKED ROAST BEEF CUT UP. YOU COULD ALSO PAN FRY ROUND STEAK CUT IN STRIPS. Ingredients

    Beef chuck, arm pot roast, 6 oz (Leftover pot roast or Hormel PreCooked Beef Roast)
    Green Peppers (bell peppers), .5 cup, strips
    Peppers, sweet, red, raw, sliced, .5 cup
    Summer squash, 1 cup slices
    Onions, raw, .5 cup, sliced
    Salsa, 1 cup
    Sour Cream, reduced fat, 1 tbsp (remove

Directions

Cut Cooked beef, peppers, onions, & summer squash into strips. Place in microwave safe bowl, top with salsa. Heat in microwave on high for 4-5 minutes til veggies are tendercrisp. Stir & top with sour cream if desired. ENJOY! You can also make this in a fry pan with fresh round steak. Cut steak in strips & fry in pan sprayed with PAM. Add Veggies til tendercrisp. Top with Chunky salsa. Heat through. Top with sour cream to serve. If desired. You could also add black beans for more fiber. Or add beans instead of meat for a Vegetarian dish.
