3 c. cubed whole wheat bread
Vegetable cooking spray
3/4 c. diced lean cooked canadian bacon
2 tbsp. diced sweet pepper
4 oz. shredded, Cheddar cheese
1 1/3 c. skim milk
3/4 eggs or egg substitute
1/4 tsp. dry mustard
1/4 tsp. onion powder
Dash pepper and paprika
Directions
Place bread in an 8 inch square baking dish coated with cooking spray. Layer bacon, red pepper, and cheese over bread; set aside. Combine remaining ingredients; pour over cheese. Cover and refrigerate 8 hours or over night. Bake uncovered at 350 degrees for 30 to 40 minutes.
