Introduction

Most recipes for chicken w/ 40 cloves call for celery, but I hate celery, so I used potatoes instead. You can also add to the pot rosemary, sage, thyme, and parsley for an extra delicious aroma. To be honest the thought of 40 cloves of garlic scared me..was worried about scaring away more then vampires...but the garlic cooks down really sweet and adds a great touch of flavor - 11/4/08
