Introduction

Number of Servings: 4

Ingredients

    300g or about 2 mediam potatoes, diced
    200g or about 3-4 cups of broccoli florettes (none of the thick stems, they are kind of woody)
    bouilon cube or fat-free chicken stock
    If you are not using stock then use enough water to cover the potatoes and then some.
    2-3 cloves of garlic, chopped.
    1.5 cups of non-fat milk

Directions

Boil the water with the bouillon cube or the stock and the garlic.
Add the potatoes and cook for 5 min.
Add the broccoli and cook until the potatoes and boccoli are tender, about 20 min.
Use a hand mixer or a food processor to blend the potatoes and broccoli into a creamy soup.
Add the milk and heat through.
Add salt and pepper to taste.
