Ingredients

    *Chick Peas, 0.5 cup (remove)
    Tangerines, (mandarin oranges), canned, 1 cup (remove)
    Celery, raw, 1 cup, diced (remove)
    Peppers, sweet, red, fresh, 1 cup, chopped (remove)
    Onions, raw, 1 cup, chopped (remove)
    Lemon Juice, 1 lemon yields (remove)
    Honey Mustard, 3 tsp (remove)
    Garlic, minced, 1 tsp (remove)
    Chili powder, 1 tsp (remove)
    Cumin seed powder, 1 tsp (remove)
    Olive Oil, 2 tbsp (remove)
    Cucumber (peeled), 1 cup, pared, chopped (remove)
    Cilantro, raw, 2 tbsp (remove)
    salt to taste
    freshly ground black pepper

Directions

Rinse the beans and chick peas and mix together in a salad bowl.
Add all the vegetables except garlic, and the mandarin orange to the bean mixture, along with 1 tbsp of cilantro.
In a separate bowl mix lemon juice, honey mustard, cumin powder, chili powder or red pepper flakes, garlic, salt, black pepper and cilantro. Drizzle oil olive while continuously strirring the mixture to emulsify the dressing. Once the dressing is ready, add that to the salad bowl and mix it thoroughly.
You may also add fresh ground black pepper more to the salad if you like it spicy.
