Introduction

Ingredients

    3 boneless, skinless chicken breast, cut into bite size pieces
    2 tsp olive oil
    salt and peppter
    1 1/2 cups thick hot salsa
    1/3 cup orange marmalade
    2 tbsp brown sugar
    2 tbsp lime juice
    1/4 tsp allspice
    2 cups cooked rice

Directions

Heat oil in large skillet over medium-high heat. Add chicken and season with salt and pepper. (You can add extra chopped onions or peppers at this point.) Cook until chicken is no longer pink.

Combine salsa, marmalade, brown sugar, lime juice and allspice together. Add to chicken and stir well. Bring to a boil then reduce heat to low. Cover and simmer 5-10 minutes, stirring occasionally.

Serve over rice.

Makes 4-5 servings.
