Ingredients

    You can omit or exchange cheeses here for flavor. I actually liked adding in a tblspn of reduced fat feta cheese... or you can omit the grated parmesan altogether and just use the mozzerrella.
    Sour Cream, reduced fat, 0.50 cup
    Mayonnaise, regular (mayo), 0.25 cup
    Chicken Breast, no skin, 2 breast, bone and skin removed
    Garlic, 2 clove
    Mushrooms, fresh, 1 cup, pieces or slices
    Onions, raw, 0.50 cup, chopped
    Spinach, frozen, 1 package (10 oz) yields
    Sargento Reduced Fat Cheese, 0.25 cup

Directions

Cube chicken.
Season chicken to your liking.
Cook chicken (with garlic) in a medium pan using olive oil or non stick spray.
When chicken is nearly finished, add in onions and mushrooms. Continue to cook until mushrooms and onions are wilted/sauteed.
Spray your casserole dish with non stick spray.
Add cooked chicken.

In another bowl, take your dethawed and thoroughly drained spinich and mix in the mayo, sour cream and parmesan cheese.

Layer this mixture over the chicken.

Top with Mozzerrella

Bake at 350 for about 30 minutes or until top is bubbly.

    this looks like it would be a good dish except for the fact there are no mesurments. I have no Idea how much checken, spinich, mayo or cheses to use. - 11/6/08

    They were entered when I first set up the recipe - I went ahead and manually entered them. However, if you click on ingredient list (in the nutritional infomation) they list all of the items needed.
