Ingredients

    1/2 cup Shortening
    2 cups Sugar
    2 each Eggs, large
    4 cups Shredded Apple, peeled or unpeeled
    2 cups Flour
    2 tsp. Baking Soda
    1/2 tsp. Salt
    1 tsp. Cinnamon
    1/2 tsp. Allspice
    1/2 tsp. Nutmeg
    1 cup Walnuts, chopped (optional)

    Warm Brown Sugar Sauce
    1 cup Brown Sugar
    2 Tbs. Butter
    1/2 tsp Vanilla
    1 Tbs Corn Starch
    1 cup Water

Directions

Preheat oven to 350F.
Prepare a 9x13 pan with baking spray.

In a large bowl, cream together the shortening and sugar. Add the eggs one at a time, mixing in well. Add the shredded apples, flour, baking soda and spices. Mix well. Add the optional chopped walnuts.

Pour in the prepared cakepan.
Bake for 35-45 minutes, or until a toothpick tests clean.

I like to make this several days in advance to allow the cake to ripen.

Warm Brown Sugar Sauce
Mix the brown sugar and cornstarch well. Add the water. Heat almost to a boil stirring frequently until thickened and smooth. Remove from the heat and stir in the butter and vanilla. Serve warm.

    Very Good
    I made it with whole weat flour. The general consensis was that it tasted like a muffin =) It was heavy, but extremely moist. - 10/13/09

    This is the best apple cake I have ever had. I'm not sure it will stay around long enough for the flavor to "ripen". (I rated this 1 star before by mistake--this cake is absolutely great!!! - 1/8/09
