Ingredients

    1.5 lbs of Turkey Tenderloin (roughly 2 tenderloins)
    1/2 cup Fat Free Ricotta
    2 Tablespoons Grated Parmesan
    2 Tablespoons Shredded Mozzarella
    1/4 cup Egg Substitute
    1/4 Cub Bread Crumbs
    1.5 cups Marinara Sauce
    1/4 cup Shredded Mozzarella

Directions

Flatten turkey tenderloins to roughly 1/2 inch thickness.
Cut tenderloins lengthwise giving you four equally sized tenderloins.
Place 1/4 of the ricotta mixture on each flattened turkey tenderloin.
Roll each tenderloin keeping the mixture in the center of the tenderloin.
Dip stuffed tenderloin into the egg substitute and coat with breadcrumbs.
Bake at 350 degrees for 40 minutes.
Remove from oven and top with heated marinara sauce and a touch of mozzarella cheese and serve.
