Number of Servings: 6

Ingredients

    Lentils, 2 cup
    8 Cups Water
    Minced Onions, 2 cup
    Ground Cumin, 2 tsp
    Dry Mustard, 2 tsp
    Minced Garlic, 2 Tbl
    Minced Dried Apricots, 1 cup
    Salt to taste
    balsamic vinegar, 1/4 cup
    Black Pepper and/or Cayenne to taste

Directions

Place lentils in soup pot or dutch oven with water; bring to a boil. Cover, lower heat to simmer, and cook for about 15 minutes

Add onion, cumin and mustard; continue to simmer, covered, until the lentils are very soft (about 15 more minutes). Add more water if it is too thick.

Add garlic, apricots, and salt to taste. Cover, let simmer another 15 minutes or so.

Stir in vinegar, add Bloack pepper and/or cayenne if desired.

Serve hot. Soup will keep for several days, or can also be frozen.

Makes 6 1-1/2 cup servings
