Ingredients

    The Splenda is optional, but I find it helps take away the acidic taste of the tomatoes.

    Number of Servings: 2

    * Pepper, black, 1.00 tsp
    * Basil, 5.00 leaves
    * Salt, 3.00 dash
    * Garlic, 2.00 cloves
    * Stewed Tomatoes, 1.00 cup
    * Tomato Paste, 0.50 cup
    * Extra Virgin Olive Oil, 1.00 tbsp
    * Splenda, 0.50 tsp

Directions

Crush or finely chop garlic
Shred the basil with your fingers (retains more flavour than cutting)
simmer over medium in one tbsp of extra virgin olive oil, or other healthy oil for 2 minutes being careful not to burn the garlic.
Reduce to low-medium heat.
Add stewed tomatoes and crush whilst stirring with the garlic and basil
Spoon over top of cooked whole wheat pasta and serve.
Add
Add salt and pepper to taste
Continue to stir over low-medium for another 3-4 minutes.
Add Splenda to taste (optional)

    Trying it now...I add a lot more seasoning - onion powder, oregano, Italian seasoning. To spice it up, red chili flakes. - 3/29/10
