Ingredients

32 oz. chicken broth
1 can bamboo shoots, cut into matchsticks
1 package mushrooms, sliced
2 cups water,
1 pork loin slice, cut into strips
1/4 tsp. crushed red pepper
3 tablespoons soy sauce
3 tablespoons rice vinegar
1 tablespoon cornstarch, mixed with 1/4 cup or reserved chicken broth.
1 egg, mixed well
Directions
makes 6 servings.
Slice bamboo shoots, mushrooms, and pork loin slices. Reserve 1/4 cup of chicken broth and put rest in pot with meat and vegetables. Add soy sauce, rice vinegar and red pepper. Bring to boil, then reduce heat and simmer for 20 minutes to cook the pork loin. Mix cornstarch and reserved broth, add to soup. Bring heat up to medium and bring to a boil. Stir in egg.
