Introduction
I just changed the apple butter to 3 tablespoons of applesauce. My kids loved these. My 3.5 year old son ate 2.5 of them with a little light whipped cream, cinnamon and walnuts on top. Ingredients

-9 oz whole wheat flour (1 cup is 4.5 oz)
-4 t baking powder
-1 t baking soda
-1/2 t ground nutmeg
-1/2 t ground ginger (I found this to be a bit strong, but it's up to you)
-1/4 c packed light brown sugar
-1 egg yolk
-1 cup canned packed pumpkin like Libby's
-3 T unsweetened applesauce
-2 C skim (nonfat) milk
-3 egg whites
Directions
In a large bowl whisk your dry ingredients: flour, baking powder and soda, and spices and set aside.
In another bowl mix your egg yolk, pumpkin, brown sugar and apolesauce.
Stir the milk in the pumpkin mix.
All at once add the pumpkin mix to the dry ingredients and mix just until combined.
In a medium bowl blend the egg whites until light and fluffy. Fold into the other batter.
Using a 1/4 measuring cup ladle into a hot (med/low heat) griddle or skillet, lightly sprayed with cooking spray like Pam. Cook until almost dry on one side then flip.
Makes 20 pancakes. 1 pancake is a serving.
