Ingredients

    4 C halibut (Approximately 1 ½ pounds)

    1 C Mayonnaise

    1 C Sour Cream

    8 oz Philadelphia Cream Cheese softened

    ½ C green chilies

    4 tsp cumin

    1 tsp cilantro (optional)

    1 small finely chopped onion

    1 C olives sliced

    1 C whipping cream

    1 cup mild salsa

    Shredded Mozzarella Cheese 16 oz

    Grated Parmesan Cheese to taste

    1 large package 8 inch corn tortillas

Directions

Cut halibut in 1” cubes, cook in boiling salt water for approximately 4 minutes. Drain and salt and pepper to taste. Mix mayonnaise, sour cream, Philadelphia Cream Cheese, green chilies, cumin, cilantro, and onion. Add halibut pieces. Fill corn tortillas, roll and place in 13 X 9 pan, and 8 X 8 pan. Pour whipping cream and mild salsa over the top of both pans. Cover with cheeses, to taste. Bake at 350 degrees for 30 minutes, Do Not over cook.

    This was very good! The entire family ate it all up and we are picky eaters. I added a little bit extra cumin but that is the only change I made.! - 8/9/09
