Introduction

A Tasty, lower sodium version of pork and potatoes. fix it and forget it! A Tasty, lower sodium version of pork and potatoes. fix it and forget it!

Ingredients

    1 lb Pork tenderloin
    .5 medium sweet onion, sliced
    5 large red potatoes w/skin, sliced
    20 baby carrots
    1 can lower sodium beef broth
    1 can Healthy Request cream of mushroom soup

Directions

Place vegetables in crock pot, then add pork loin. Combine beef broth and mushroom soup, pour over top of pork and vegetables. Cook on Low 4-6 hours.

    Good
    My crockpot didn't cook the pork's internal temp high enough on the low setting so had to turn it up to high at the end. The pork roast was also setting up on top of all the vegetables which may have kept it from getting as hot as it should. I will start out on high if I try this again. - 4/4/11
