Introduction

This is a low fat, low cal version of traditional scalloped potatoes, using turkey ham in place of ham, using skim milk in place of higher fat dairy, using plenty of seasoning. Ingredients

    2.5 lbs (approx) Potatoes, either red or russet will work, washed, unpeeled, sliced thin.
    3 C skim milk
    1/2 large onion, diced
    2T soy flour
    2T whole wheat flour
    1 lb turkey ham, or very lean ham, diced
    Garlic - to taste (I used 1T minced from jar, plus another teaspoon powdered)
    Salt and Pepper - to taste (I used 1teas salt, 1/2teas pepper)

Directions

This recipe makes 10 1-Cup servings.

Mix all ingredients together in a large bowl. Place mixture in a 9x13 baking dish, bake at 375 for about an hour (test your potatoes for doneness). I do not put cheese on top to keep cals and fat down, but you could add if you wish.
