Introduction

Carnival Squash resembles the acorn squash in shape, but the outside is not nearly as green - it has orange and yellow stripes. It's raw form smells like raw pumpkin.
The goals for my recipes are LOW SODIUM, therefore rice etc has been cooked without anything added to them.

Ingredients

    1 Carnival Squash
    2 stalks celery, chopped
    1/3 cup chopped red onion
    1 Tbsp chopped garlic
    1/2 cup cooked white rice (NO SALT ADDED)
    1/2 cup cooked wild rice (NO SALT ADDED)

Directions

Half and 'gut' squash, place in baking pan with about 1" water. Bake in 400* oven for about 40 minutes.
Heat pan with a spray of non-stick spray. Saute celery and onion for about 1 minute. Add garlic, saute until veggies loose their gloss. Stir in rices. Spoon into each squash half.
