Introduction

This is an easy way to make a fresh pasta sauce. You can also add more veggies such as green bell pepper, artichoke hearts or calamata olives to this dish. Ingredients

    2 tbsp. Oregano
    2 cloves Garlic - minced or through a garlic press
    2 tbsp extra virgin olive oil
    2 boneless skinless chicken breasts
    2 cups mushrooms - sliced
    1 medium yellow onion - diced
    1 14 oz can whole stewed tomatoes
    4 Tbsp parmesean cheese
    1 can chicken broth

Directions

Dice chicken breasts and sautee in olive oil until cooked, approximately 5 minutes. Remove chicken and set aside. Add diced mushrooms and onion along with garlic to pan and sautee until tender. Remove tomatoes from can and chop them finely. Add tomatoes and tomatoe juice from the can to the pan. Add back chicken. Add chicken broth and season with oregano, salt and pepper to taste.

After sauce is made, bring water to a boil and cook pasta. This allows the flavors of the ingredients in the sauce to fuse together.

Place serving of pasta on a plate and top with sauce. Make sure to add the 'juice' of the sauce, not just the food. Top with parmesean cheese.
