This is my Husband's Favorite Dish, & if you are from MN it is the Hot Dish that is at every potluck.
You can change the vegetables and add seasoning to your own tastes as it is very versatile

Number of Servings: 8

Ingredients

    1 1/2 pounds lean ground beef
    1 cup chopped onion
    1 cup chopped red bell pepper
    1 tablespoon minced garlic
    1 (1-pound) package frozen mixed vegetables
    1 (4-oz) can mushrooms
    1 can cream of mushroom soup
    4 cups tater tots
    1/2 cup sour cream

Directions

Preheat oven to 350°F
Brown hamburger and add onion & bell pepper. Cook until hamburger is thoroughly cooked and onion and bell pepper is translucent add garlic cook 1 minute more, and remove from heat.

In a large mixing bowl, mix together hamburger mixture, mixed vegetables, mushrooms, 3 cups tater tots, mushroom soup, and sour cream. stir till combined place in a 2 quart baking dish. Top with remaining tater tots. Bake for 30 minutes or until bubbly.
