Ingredients

1 1/2 pounds lean ground beef
1 cup chopped onion
1 cup chopped red bell pepper
1 tablespoon minced garlic
1 (1-pound) package frozen mixed vegetables
1 (4-oz) can mushrooms
1 can cream of mushroom soup
4 cups tater tots
1/2 cup sour cream
Directions
Preheat oven to 350°F
Brown hamburger and add onion & bell pepper. Cook until hamburger is thoroughly cooked and onion and bell pepper is translucent add garlic cook 1 minute more, and remove from heat.
In a large mixing bowl, mix together hamburger mixture, mixed vegetables, mushrooms, 3 cups tater tots, mushroom soup, and sour cream. stir till combined place in a 2 quart baking dish. Top with remaining tater tots. Bake for 30 minutes or until bubbly.
