Ingredients

2 125gm (4 1/2 oz) cans mackerel fillets (in brine)
4 slices bacon (low sodium brand will cut sodium levels)
1 medium onion sliced
black pepper to taste
1 slice whole wheat bread torn into soft crumbs
Directions
Rinse and pat dry mackerel fillets and place in a small, shallow oven safe dish, season with pepper. In a frying pan, cook bacon until fat runs, add onion slices and cook until tender but not brown. Spread over fish. Toss soft bread crumbs in bacon fat (or olive oil if you're concerned about saturated fat) and sprinkle over fish. Bake in a preheated 375 -400 F oven for about 10 -15 minutes or until breadcrumbs begin to toast. [Pressed for time? Toss the mackerel fillets in the pan with bacon and onions to warm, transfer to an broiler proof dish, top with breadcrumbs and place briefly under the broiler to toast the crumbs]
