Introduction

Ingredients

2 4oz. Tilapia Fillets
1-2 tsp. curry powder to taste- I use hot madras style
sprinkle garlic powder, onion powder, chili powder (if you like spicy), and S&P to taste
4 c. roughly chopped spinach leaves
1-2 c. sliced mushrooms (to your preference- I LOVE mushrooms!)
1-2 Tbs. minced garlic (to taste)
2 tsp. olive oil
Directions
This is crazy easy to do.
In a skillet, sweat the minced garlic over med. heat in olive oil. S&P to taste.
Season tilapia with light S&P (to taste), then the spices, place on baking pan lined with lightly oiled aluminum foil or dry parchment paper. Place on lower rack in oven under broiler.
Check fish every 5 mins or so (as you prepare the veggies), until just sizzling. Usually 10 mins or less total cooking time for the fish.
Back to the saute: When garlic is translucent (about 3-5 mins), add sliced shrooms. When they appear soft, add spinach and sautee until it starts to wilt.
Serves 2 people, and is great with brown rice or cous cous.
