Ingredients

    - 2 cans of 798mls diced tomatoes
    - 1/2 cup coconut milk
    - 2 tbsp curry powder
    - 2 medium onions
    - 2.5 cups chickpeas
    - 2 turkey breasts

Directions

Makes 8 servings

Put all ingredients (including raw sliced turkey breasts) In large pot cover and simmer x 2-3 hrs on medium heat. If there is too much liquid simmer uncovered until consistency is right.

Very Easy, we have it with Naan Bread or Orzo!

My husband loves it and it is cheap and non labour intensive! You can improvise and have chicken or turkey change the types of curry powder you use and substitute potatoes for chick peas.
