Ingredients

    * *Potato, raw, 1 medium (2-1/4" to 3-1/4" dia.) (remove)
    * Onions, raw, 1 large (remove)
    * Garlic, 4 clove (remove)
    * Vegetable Broth, 2 cup (remove)
    * Butter, unsalted, 1 tbsp (remove)
    * *Flour, white, .0625 cup (remove)
    # Milk, nonfat, 1 cup (remove)

Directions

boil potatoes with onion. make rue with butter and flour and milk. add garlic, then potatoes, mashing them to desired consistency and vegetable broth. Cook down to preferred consistency.

Note: to retain flavor and nutrition, I boil potatoes whole.
