Introduction

A quick and easy, low fat chicken salad for lunch, dinner or picnics. It's easy to take this along to work too! A quick and easy, low fat chicken salad for lunch, dinner or picnics. It's easy to take this along to work too!
Number of Servings: 3

Ingredients

    1 can chunk chicken breast in water (9.75 ozs)
    2 stalks celery, diced
    1/2 cup red bell pepper, diced
    1/4 cp red onion, diced
    6 tbl fat free mayo
    2 ozs fat free feta cheese, crumbled
    2 tsp dried dill weed
    salt & pepper to taste

    6 leaves of lettuce
    3 whole wheat pita pockets (Weight Watchers or similar)

Directions

Mix all ingredients (except pitas and lettuce) together in a bowl. Chill or serve immediately.

Cut pita pockets in half.
Add 1 lettuce leaf to each half and spoon chicken salad mixture into pocket, dividing evenly.

Makes 3 whole pita sandwiches. (6 halves)
