Delicious and easy main dish! Note: Nutritional info calculated is if you use ALL of the egg whites and chicken coating mixture, but you should have some of it left after coating the chicken breasts, so the nutritional counts will be lower than indicated by the recipe calculator. Ingredients
-
4 boneless, skinless chicken breasts, raw
1.5 cup finely crushed seasoned croutons (any flavor you prefer - I like Ranch)
3/4 cup grated Parmesan cheese
2 tbsp garlic powder
3 egg whites, whipped
butter flavor non-stick cooking spray
Directions
Preheat oven to 375 degrees F.
Pound chicken breasts between 2 sheets of wax paper until thin.
Crush croutons until fine texture in blender.
Whip egg whites until frothy in large shallow bowl.
Mix crushed croutons, Parmesan cheese, and garlic powder together in bowl. Transfer to a plate.
Spray a glass baking dish generously with butter flavor non-stick cooking spray. Make sure dish is large enough that chicken breasts will not overlap!
Dip the chicken breasts, one by one, first into egg whites, coating both sides.
Then dip in crouton/cheese mixture, pressing chicken into mixture to coat both sides well.
After coating, place in baking dish and bake at 375 for about 30-35 minutes and chicken is browned/crisped nicely. If you prefer, you may also broil the chicken for a few minutes to brown/crisp the tops more if they are not browned to your liking.
Serve with your choice of light dressings for dipping if you prefer, but it's pretty good as is!
Makes 4 servings.

Is it 3 cups of croutons or 1.5? You have 1.5 cups listed in the recipe, but 3 cups listed in the nutritional details. I really hope it's only 1.5 cups-- because the calories are REALLY high with 3 cups, plus, I doubt 4 chicken breasts use almost a cup of crumbs each! Please look over your info! - 12/4/08
