Ingredients

• 12 manicotti shells or 22 oven ready manicotti shells
• 3 tablespoons all-purpose flour
• 1 1/2 cups milk, 1%
• 2 cloves garlic, minced
• 1 can (28 oz) diced tomatoes, undrained
• 1 cup mozzarella, part skim grated
• 3/4 teaspoon dried dill weed
• 1/2 teaspoon cayenne pepper
• 1/4 teaspoon black pepper
• 2 packages imitation crabmeat, chopped
• 500 grams cottage cheese, 1%
• 1/4 cup parmesan cheese, grated
• 1 egg
Directions
1. Prepare manicotti according to package directions, undercooking slightly. Drain. Rinse with cold water and drain again. Set Aside. Skip step one if using oven ready shells.
2. Mix flour and milk together until smooth. Add garlic. Pour into a saucepan and cook, stirring often, until sauce is thick and bubbly, about 7 minutes. Stir in tomatoes, 1/2 of cheese, dill, cayenne pepper, salt and pepper. When cheese has melted, remove from heat.
3. To prepare filling combine crabmeat, cottage cheese, remaining cheese, parmesan cheese and egg in a large bowl. Mix well.
4. Spray a 13 x 9 inch baking dish with non-stick spray. Using a teaspoon, spoon filling into manicotti shells. Place filled shells in baking dish in a single layer. Pour sauce evenly over top. Cover and bake in 350°F oven for 30 minutes.
5. Remove from oven, uncover and let cool for 5 minutes before serving.
