Introduction

I am so in love with vegetables that’s why I thought of concocting this one. A perfect side dish for grilled fish or chicken and a welcome dish at any picnic but sometimes I take this as my complete meal anytime of the day. It’s easy to prepare and nutritious! Ingredients

    8 tbsp. rice wine vinegar
    1/4 tsp. coarse ground pepper
    8 tsp. sugar
    1/2 tsp. salt
    4 tbsp. chopped fresh dill
    3/4 tsp. grated lemon peel

    1 English cucumber
    4 radishes, cut into match sticks
    2 tomatoes, chopped

Directions

Mix the first six ingredients in a glass or stainless steel bowl. Stir until the sugar dissolves. Slice the English cucumber lengthwise and then cut into 1/4 inch segments. Add this to the marinade, along with the radishes and the tomatoes. Toss well to combine flavors. Refrigerate for 1/2 hour, stirring a few times to makes sure everything is equally marinated.
Note: You can adjust sugar, salt, vinegar and pepper according to your taste.

Makes 3-4 servings

    This was excellent. I didn't have any rice wine vinegar so I used red wine vinegar instead. The fresh dill and lemon zest make the dressing refreshing and absolutely delicious! - 9/6/10

    This sounds delicious. I am going to try it. Im diabetic, so do you think maybe I can use Splenda instead of sugar? - 12/29/08

    Honestly, I have never tried using Splenda. But maybe you can try by diluting it to the vinegar. Or perhaps a little sugar will not be that bad for you, right? Lol

    The Correct No. of Calories per serving is only 50. I don't know how to edit the page.
