Introduction

Ingredients

    1 pkg (10 oz) frozen chopped spinach
    1 cup liquid egg substitute
    3/4 cup shredded reduced-fat cheese
    1/4 cup chopped green peppers (or any color)
    1/4 cup finely chopped onions
    Salt
    Pepper

Directions

Thaw spinach and drain out all liquid. Spray 12-cup muffin tins with cooking spray. Mix egg substitute, cheese, peppers, onions, and spinach in a bowl. Mix well and add salt and pepper to taste. Fill muffin tins evenly with mixture. Bake at 350 degrees for 20 minutes until knife inserted in center comes out clean.

Quiche cups can be frozen and reheated in microwave. Also - any combination of veggies and reduced-fat cheeses may be used.

Serves 6. One serving is 2 quiche cups.

    Great idea, but way too much spinach. I'll try it again and substitute some grated potato & carrot for 1/2 of the spinach. - 3/2/09

    Sounds yummy. I think I'm going to try them for a holiday lunch item and place them in a dinner roll for easy handling. - 12/21/08
