Introduction

Surprisingly moist, easy, and cheap. Surprisingly moist, easy, and cheap.
Number of Servings: 4

Ingredients

    (1) 15 oz. can jack mackerel, reserve juice
    (1) large egg
    (2) slices light wheat bread, toasted
    1/4 c. onion, minced very fine
    salt & pepper to taste

Directions

In a bowl, mix mackerel with egg, onion, salt & pepper. Tear the toast into very small pieces and stir into mixture. Should be a similar texture as raw meat loaf. If it is too dry, add a splash of the reserved fish liquid or millk. Form into 4 large patties. Spray non-stick pan with cooking spray and fry over medium to medium-high heat until browned on both sides and cooked through.

    I love jack mackerel patties.My mom made this same recipe while I grew up.And I didn't have the recipe for tonight, so I checked this one out online.This is the same recipe as my moms.I tryed this recipe and it's great!!! - 3/27/09

    I'm so glad you liked them! My mom made these when I was little too, but I didn't really have a recipe so I came up with this one. They are also really tasty seasoned with a lot of cajun spices. Yum!
