Introduction

I make most meals just for myself, and this is really easy to do for just one person. Minimal clean up too! I like to toss in a ton of mixed vegetables, whatever I have in my freezer, but I try to make sure I get a variety of colors included. The Barilla Plus pasta has extra protein, but you can add in some grilled chicken too. I make most meals just for myself, and this is really easy to do for just one person. Minimal clean up too! Ingredients

    1/2 c. Barilla Plus Rotini Pasta
    2 c. frozen mixed vegetables
    1 tsp. red pepper flakes
    2 T. salsa
    1 tsp. parmesan cheese

Directions

Make pasta according to package directions. Since the pasta is made with extra protein, it does take a few more minutes than traditional pasta.

In a separate small skillet, spray lightly with olive oil. Add frozen vegetables and cook over medium heat until cooked thoroughly. Add a teaspoon of red pepper flakes for a little extra kick! When the vegetables are nearly done, add the two tablespoons of salsa and mix in to the veggies.

Drain the pasta, mix into the vegetables, and sprinkle with parmesan cheese.

Serve!
