Introduction

Chicken soup using leftover chicken (or turkey), with a bit of curry powder and ginger to spice it up. Good for winter coughs and colds. Chicken soup using leftover chicken (or turkey), with a bit of curry powder and ginger to spice it up. Good for winter coughs and colds.

Ingredients

    2 onions,chopped
    8 cloves garlic, crushed
    200g cooked chicken
    1/2 tsp ground ginger
    2 tblsp curry powder
    600g milk or soy milk
    1.5 litres home made chicken or turkey stock

Directions

Place onions at the bottom of the crockpot, then add everything else. Cook on high for about four hours, or low for eight or more hours. About half an hour before eating, turn off heat and cool slightly. Puree a bit at a time in a liquidiser (blender) and transfer to a large saucepan. Bring to simmering just before you eat.

Season as required with salt and/or pepper

Can be frozen in indvidual portions and quickly reheated. Serve with home made bread for a satisfying meal.

(Can also be made on the stove, in half quantities - but soften the onions and garlic in a little olive oil before adding the other ingredients, and cook for about an hour)
