Introduction

Ingredients

    Part 1
    Tomato, Cucumber, Corn, Help Seed Nuts, Flax Seeds, Vinegar, Onion.

    Part 2
    Sour Cream, Beans, Crab, Lime.

    Part 3
    Romaine Lettuce to use as the wrap.

    Note - My initial intention was to have avocado instead of crab in part two. Also, after eating this meal we decided that adding a couple of croutons to the taco would have added a nice dry crunch.

Directions

Slice or chop tomato, cucumber, and onion. Mix in a bowl with corn, hemp, flax and vinegar. Set aside.

In a separate bowl mix sour cream, crab (or avocado), beans, and a nice big squeeze of lime.

Choose and wash 6 lettuce leaves. Select a leaf, add 2T of veggie mix, spread out, add 1T of crab and bean mix. (croutons would be added at this point if you are going to use this). Roll up lettuce and chow down.

To make this vegan, eliminate the sour cream and simply whip the avocado to make it saucy. Also don't use the crab.

My plan for the 2nd part was avocado, lime, and sour cream, beaten into a nice creamy consistency to use as a garnish, but the avocado went missing!

    I wish some people were not such vegetarian SNOBS!!! This is for people who are trying to make healthy choices. I know allot of vegetarian who eat fish but no meat or poultry. DMGODDESS and BREEZEE77 need to take what they like, leave what they don't and keep their condescending opinions to themselv - 6/27/09

    I left out the hemp seeds and corn, used garlic flavored vinegar, black beans, lime juice, cilantro, chopped the lettuce, and served inside a corn taco shell w/sour cream. I also used chopped avodado. Shrimp would be good as an alternate from crab...very tasty...plan to try chili powder next time. - 12/20/08

    This is NOT a vegetarian recipe... It should not be in this section. I realize substitutions could be made (such as that crab being replaced with the original plan of avocado), most recipes could be substitued in similar manners, doesn't mean all of those recipes should be listed under Vegetarian. - 12/24/08

    Just to be clear:
    Vegetarianism is the practice of a diet that excludes meat (including game and slaughter by-products), fish (including shellfish and other sea animals) and poultry. Includeing crab is not vegetarian.

    As noted in the recipe the crab was a last minute addition in lieu of avocado.
