Introduction

Not low-fat or low-cal, but they're so good — and they're a Christmas tradition in my family. You're either a butter cookie person or a sugar cookie person ... we go for the butter cookies (just like Kelly Ripa. Mom called me one year near Christmas, all excited that Kelly used "her" butter cookie recipe.) Not low-fat or low-cal, but they're so good — and they're a Christmas tradition in my family. Ingredients

    1 cup soft butter
    1/2 cup sugar
    1 egg, unbeaten
    1 1/2 teaspoons vanilla
    3 cups flour
    1 tsp baking powder
    1/4 tsp salt

Directions

Mix together butter, sugar, egg and vanilla thoroughly. Sift together flour, baking powder and salt. Add gradually to butter mixture. (Toward the end, it's easiest to mix with your hands. Take off rings first!)

Wrap in plastic wrap and chill an hour or longer. Roll to 1/8-inch thick. Cut with cookie cutters. Place on ungreased cookie sheet.

Bake at 400 degrees F about 8 minutes. Cool and decorate as desired.
